Sindhi koki -  is one of the most famous dishes from Sindhi cuisine , Sindhi Koki is a flatbread with a fabulous taste and interesting texture.  It is a breakfast dish made out of wheat flour, gram flour, spices, onions and fresh herbs.  This is most relished snack by Sindhi people, mostly eaten with butter,curd,pickle and papad.Grab some HOT CHAI and you will end up eating a quick fix, filling and most satisfying breakfast.      Unlike a chapati or a paratha, that we usually eat, this is not very soft but is meant to be a little crunchy, chewy, and slightly hard.      While the soft onions add a little sweet taste too it, the addition of coriander leaves makes it look a lot more attractive.Sindhi koki remains absolutely fresh for 24 hours without refrigeration.       Because of this reason, Sindhi koki is the most preferred flat-bread that people generally carry for a picnic or travel.It also suits best for a perfect lunch box meal. Gujrati Moong Dal Dhokla


It comes from the land of Gujarat, India and is now popular around the world. Dhokla is considered to be a very healthy snack as it is made by steaming the batter. It is made with very less oil.Moong Dal Dhokla is an absolute delicious breakfast accompanied with a hot cup of Ginger Chai (Tea).Usually, dhokla is prepared from rice/sooji/gramflour but as moong dal is light on stomach and quite good for digestion, preparing Moong Dal Dhokla is quite a healthy option. Along with moong dal, I had even used besan to enhance its flavour. 

      Dhokla’s are sold in many Indian Restaurants or grocery stores. Sold either pre-packed containers or huge trays displayed on counter tops of soft yellow spongy delicate square dhoklas garnished with a nice spicy tarka (tempering) and loads of freshly chopped coriander and coconut. This is a completely super healthy and nutritious snack. It’s best when served with nice spicy and tangy chutney like Green Coriander Chutney or tomato ketchup.I am always been a huge fan of gujurati snacks, thats why sharing it in my blog.


Gujrati Moong Dal Dhokla

Ingredients

For Dhokla:
  • 1 cup Moong dal
  • ¼ cup besan/Gram flour
  • water, for soaking
  • 1 inch ginger
  • 2 chilli
  • ¼ cup curd
  • ¼ tsp turmeric
  • ½ tsp salt
  • ½ cup water
  • ½ tsp eno / fruit salt

Other Ingredients:
  • 2 tbsp oil
  • 1 tsp mustard
  • 1 tsp cumin / jeera
  • 1 tsp sesame / til
  • pinch hing / asafoetida
  • 2 chilli, slit
  • few curry leaves
  • ¼ cup water
  • 1 tsp sugar
  • ¼ tsp salt
  • 1 tsp lemon juice
  • 2 tbsp coconut, grated
  • 2 tbsp coriander, finely chopped

How to make Moong Dal Dhokla
  • Firstly Wash the moong dal and soak in enough water for 3-4 hours.
  • Drain the water and grind the moong dal to make a fine paste. Use little water if required. The batter should be pouring in consistency like dosa batter. ( The consistency of the batter is very important to make perfect Dhokla )
  • Add besan and curd and mix well. Cover the dal mixture and keep aside for 2-3 hours.
  • add 1 inch ginger, 2 chilli and blend to a coarse paste.
  • Add salt and turmeric powder and mix well.
  • Now add ENO in the batter mix gently until the batter turns frothy
  • Transfer the batter in the greased Dhokla pan.
  • Steam for 15-20 minutes until done.
  • Cut the dhokla in cubes or whatever shape you want.

Tempering Preparation:
  • In a pan heat 2 tbsp oil and splutter 1 tsp mustard, 1 tsp cumin, 1 tsp sesame, pinch hing, 2 chilli and few curry leaves.
  • add ¼ cup water, 1 tsp sugar, ¼ tsp salt and 1 tsp lemon juice.
  • mix and get the water to a boil.
  • pour the tempering over dhokla.
  • garnish with 2 tbsp coconut and 2 tbsp coriander.
  • finally, enjoy dal dhokla with green chutney.
