Sindhi koki -  is one of the most famous dishes from Sindhi cuisine , Sindhi Koki is a flatbread with a fabulous taste and interesting texture.  It is a breakfast dish made out of wheat flour, gram flour, spices, onions and fresh herbs.  This is most relished snack by Sindhi people, mostly eaten with butter,curd,pickle and papad.Grab some HOT CHAI and you will end up eating a quick fix, filling and most satisfying breakfast.      Unlike a chapati or a paratha, that we usually eat, this is not very soft but is meant to be a little crunchy, chewy, and slightly hard.      While the soft onions add a little sweet taste too it, the addition of coriander leaves makes it look a lot more attractive.Sindhi koki remains absolutely fresh for 24 hours without refrigeration.       Because of this reason, Sindhi koki is the most preferred flat-bread that people generally carry for a picnic or travel.It also suits best for a perfect lunch box meal. Pizza Paratha ( stuffed vegetable cheese Paratha)

Everyone enjoy pizza. Pizza has become a universal food enjoyed by all. Pizza paratha is perfect for the times when you want to enjoy homemade pizza. This is also quick and easy recipe. Personalize your pizza with your favorite toppings. You can serve this for lunch, snack, or especially good for kids lunch box. Basically it is a unique fusion recipe with the combination of north indian paratha recipe with the italian pizza recipe. The recipe is also popularly known as stuffed vegetable cheese paratha with vegetable stuffing is completely open ended.




Ingredients
  • Wheat Flour - 300 grams
  • Water - 200 ml.
  • Salt -1/2 teaspoon
  • Mozzarella cheese - 175 grams
  • Green bell peper - 1/2 cup
  • Yellow bell pepper - 1/2cup
  • Onions - 2 nos.
  • Corn - 1/2 cup
  • Olives - 2 tablespoons
  • Italian seasoning - 1/2 teaspoon
  • Pizza sauce
  • Coriander leaves
  • Chilli flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon                                                                                                 
How to make Pizza Paratha :Method
  • In a mixing bowl add 300 grams wheat flour, 1/2 teaspoon salt, 200 ml.water and knead it into a smooth soft dough. Keep aside.
  • Take another mixing bowl add  mozzarella cheese, green bell pepper, yellow bell pepper,  onions, corn, 2 tablespoons olives, 1/2 teaspoon Italian seasoning, 1/2 teaspoon chilli flakes, 1/2 teaspoon salt and mix well to combine.
  • Take a dough ball and roll the dough ball in circular shape.
  • Spread some pizza sauce and mixture over it. Cover the paratha and seal the edges.
  • Heat a tawa, put the paratha on hot tawa, spread some oil over it and cook on both sides till golden.
  • Serve hot with your choice of sauce & garnish with coriander leaves.
